Komatsu-San’s Traditional Okonomi Sauce Recipe
By popular demand, here is Mr Komatsu’s own recipe for okonomi sauce. Looks like a lot of work!

Hi Naomi san
Following is recipe for Okonomiyaki sauce
AAA))
Dried Shiitake 1 piece
Kelp 1 piece ( 10 cm )
Dried sardine 6 pieces ( take off head and entrails )
Yellow Onion 1 piece
Carrot ½ piece
Canned whole tomato 1 can
Garlic ½ bunch
Ginger 40 g
Water 1,000 cc
BB))
Black pepper 10g
Bay leaf 5 piece
Cinnamon 3 piece
Nutmeg 2 tsp
Japanese pepper ( Sansho ) 2 tsp
Red Pepper 1 piece
Chinpi ( Dried orange peel powder ) 30g +++ Orange must be Japanese
one, like Satsuma +++
Thyme 1 tsp
Sage 2 tsp
Clove 20 piece
CC))
Soy sauce 1 cup
Sugar 200 g
Vinegar ½ cup
Salt 100 g
Apple 1 piece
1. Slice AA)) Vegetable
2. Put AA)) into pot and boil with medium fire in 2 hours ( Do not cover
the pot )
Until the amount of veg going to be ½
3…Add BB)) and boil in another 20 min.
4…Cut apple and add CC)) and apple into the pot in another 10 – 15 min
5…Put off fire and leave pot to be cooling down
6…Put everything into blender
7… Strain with thin cloth and take away debris
8… Boil the soup in 20-30 min
